Serves Four
1 tbsp olive oil
½ cup (2¾ oz.) red onions, diced
2 garlic cloves, crushed
1 lb ground beef
1⁄3 cup red bell peppers, diced
1⁄3 cup green bell peppers, diced
2 tsp ground cumin
1 tsp chili powder
2 tsp tomato paste
1 cup (8½ oz.) canned whole tomatoes
1 cup (4 oz.) shredded cheddar cheese
salt and pepper to taste
For serving
½ cup sour cream
2 tsp fresh cilantro, chopped

TipTo reduce dishes, you can also cook the beef and vegetables in an oven-safe skillet. When the beef is browned, simply top with cheese and place into the oven.

I am generally not wild about casseroles, but I might try this one, substituting ground turkey for ground beef.

I brought my cilantro in this week to overwinter inside. I love the taste of fresh cilantro, especially in Mexican dishes. Thanks for pointing the differences out to those who are confused about the difference between cilantro and coriander.

It's starting to be chilly mornings here, so this would be a perfect dish for us. Looks so good and simple. My favorite kind of recipe.
that does look worth a try, I would like to make it with quorn mince (vegetarian) the idea of having warm comforting foods is very much at the front of all my food shopping just now :)
