Chaffles : Jalapeño Popper : Keto : Low Carb



Chaffles you may be asking ...
I've not heard of them!
I've not tried one!

Should I try them?
Well, they certainly fit with my LCHF menu plans, and let me share some more information about them.

If you haven’t heard of the term “chaffle” yet It's the latest craze that has taken the diabetes community by storm!

What is a chaffle you ask?
A chaffle is basically a cheese and egg alternative to bread, cooked in a mini (or regular, just adjust recipes accordingly) waffle maker that can be used for anything from breakfast foods straight through to your after-dinner treat. It basically acts as a base to any creative concoction you can conjure up.

Why are people with diabetes so excited about chaffles? 
Well for one, those of us who love to experiment with new low-carb options now have this new blank canvas to create from. But more importantly, this latest cooking invention can also help keep your blood sugars in check straight from morning till night! That's good news! 

But you don't have to be diabetic to enjoy them, why not give them a try! 

Naomi Sherman says, "Is there anything chaffles can't do? With only 4 g of carbs, chaffles are the go-to keto (low carb) craze that can rock any flavour, sweet or savoury. Here they get a spicy sass and layers of complex flavours with cream cheese, bacon, and jalapeño poppers. You'll never miss waffles again.

Ingredients
Serves Four
Chaffles
4 eggs
2 cups (225g) cheddar cheese, shredded/grated
2 tbsp. fresh chives, chopped (save some for garnish)
Topping
½ cup (125ml) cream cheese, softened
½ tsp garlic cloves, minced
1 scallion (green/spring onion), chopped finely
½ cup bacon (125ml), chopped and cooked
2 fresh jalapeños, seeded and sliced

½ scallion, chopped for garnish
Tips
A large waffle maker takes 6 minutes and a mini waffle maker about 3 minutes per waffle. 
These chaffles are best eaten straight away but can be frozen and reheated. Instead of fresh jalapeños, you can use pickled jalapeños for equal deliciousness."

Chaffles : Low Carb : Keto : Good for Diabetics




The low-carb keto waffle that has taken the world by storm! This recipe gets rave reviews and is the perfect base to get creative. Want savoury chaffles? Add ham and chives. Sweet chaffles? Add vanilla and cinnamon. The possibilities are endless. Why not whip up some delicious chaffles for your next Sunday brunch!

Ingredients
Serves Four
2g net carb per serving
1 oz. / 30g butter
4 eggs
8 oz. / 225g mozzarella cheese

4 tbsp. / 30g almond flour
Tips
These chaffles are best eaten straight away but can be frozen and reheated.
Good low-carb options include sugar-free whipped cream, nut butters, or fresh berries. To make the berries juicy like a sauce, heat them for a minute in the microwave, or warm them in a saucepan.

Blueberry Chaffles : Low Carb

Blueberry Chaffles


Is there anything that keto waffles, aka "chaffles", can't do? Here with hints of vanilla and delicious pops of sweet blueberry, they make a light and fluffy breakfast ...

Ingredients
Serves Four
9g carbs per serving
Blueberry chaffles
4 eggs
4 oz./110g (1 cup equals 4 oz.) mozzarella cheese, shredded
1 tbsp. / 8g coconut flour
1 tsp vanilla extract
½ cup / 125ml fresh blueberries
Serving
½ cup / 125ml heavy (double) whipping cream

1 cup / 225ml fresh blueberries

Blueberries, not only are they delicious and nutritious but they also have one of the highest antioxidant levels amongst all fruits, vegetables, spices and seasonings.

Blueberries are low in carbs and therefore do not have a significant impact on blood glucose levels, making them a good choice for diabetics.

Blueberries can also be frozen without reducing any of their antioxidant properties or delicate structure. So pick up those on offer in the supermarket and get them in the freezer ... now that's a good idea!

Chaffle ...have you tried one yet, they are keto / low carb !

The other week I spotted a post on Dr Steve Parker's 'Diabetic Mediterranean Blog' saying that he had Just Learned About Chaffles.

Will you be trying one?

Well, I haven't … yet … but they do sound rather good and would certainly fit with my LCHF menu plans.

Make Time For Blueberries in July

I do hope you have been enjoying some blueberries during July because it is known as National Blueberry month. Don't worry if you haven't, you still have time!


Do you like blueberries? Eddie and I enjoy them simply served with double (heavy) cream.

Of course there are many low carb recipes that make good use of blueberries:

Some Tips for Preparing Blueberries
Fresh berries are very fragile and should be washed briefly and carefully and then gently patted dry if they are not organic. Wash berries just prior to use to not prematurely remove the protective bloom that resides on the skin's surface. If you know the source of either wild or organic berries try not to wash them at all.

When using frozen berries in recipes that do not require cooking, thaw well and drain prior to using.

Blueberries retain their maximum amount of nutrients and their maximum taste when they are enjoyed fresh and not prepared in a cooked recipe.

July : National Blueberry Month

I do hope you have been enjoying some blueberries during July because it is known as National Blueberry month. Don't worry if you haven't, you still have time, and of course why not enjoy some next month too!


Do you like blueberries? Eddie and I enjoy them simply served with double (heavy) cream.
