Juicy and sweet, fresh tomatoes can be a delicious addition to salads. They come in a range of sizes and varieties from small cherry to big beef, and traditionally they're red in colour but you can also get tomatoes in yellow, green, purple and orange. Tomatoes are mainly a carbohydrate with some fibre, but they are best known for their vitamin and mineral content which includes calcium, magnesium, beta-carotene (which becomes vitamin A when consumed), vitamins C and E, some B vitamins and vitamin K. You may like to read more about tomatoes here. But if you are looking for some recipe suggestions (many are low carb) have a look below, there may be one, or more, you'd like to try.

These are great ways to enjoy tomatoes. Always a favorite staple in our house!
I had no idea that tomatoes were predominantly carbohydrates. I love them (particularly homegrown), and use them often. Thank you for continuing my education.
Do you have to limit them in your diet?
Love tomatoes. I eat lots of them, all different kinds.
...they are great and coming soon here!

Many thanks for your comment and question.
As you may be aware my husband Eddie is a type 2 Diabetic, and yes, he does have to limit them as they can affect his blood sugars. This is why when you are diabetic it is especially important to know the affect certain foods have on you, as what suits one person may not suit another!
I am not diabetic but I do live a LCHF lifestyle, my carb intake is about 50 grams per day and I do have a few more tomatoes than Eddie does.
Tomatoes contain about 3 grams of net carbs per 100 grams (about 6 grams per cup). But if you are eating a strict keto low-carb diet (below 20 grams per day) it’s worth keeping in mind that the carbs do add up, and you can only eat a moderate amount of tomatoes to stay under that limit.
Certain forms of tomatoes are more concentrated in carbohydrates, so more planning is needed to fit these foods into your menu plans.

Good suggestions!
thank you.
Nothing like fresh tomatoes out of the garden. We've not had much luck with tomatoes this year. Tried growing them from seeds and they are pretty pathetic looking.
Their attractive red color doesn't let us miss them. Tomatoes are the "first responders" to the salad feast. And we cannot ignore their lycopene pigment that has many health benefits.
Both soups sound great, but I think I will give tomato one try.
Coffee is on
Great post Jan!
I love tomatoes and cook with them often.
I also love to snack on cherry tomatoes🍅
I tried to make a tomato pie once - and I let it drain for a long time - it was good - but still wet on the bottom.
gorgeous, delicious post! thanks for sharing these lovely recipes!
I've never heard of tomato pie before. I am really hungry, now! Everything looks so tasty.
There is nothing nicer than tomatoes straight from the garden in whatever guise.
Wonderful fresh tomatoes that are losing their taste to the old fashioned ones, still they are ok.
Some great recipes there. It won't be long now until I'm picking ripe tomatoes from my plants.
Los tomates me encantan. Un beso.
great recipes! thank you!
I love cherry tomatoes in salads or eaten out of hand
Tomatoes are always good! Valerie
Tomatoes is a staple in our house during the summer, especially when the ones I grow are ripe. We love a simple caprese salad. These recipes look good.
These tomato dishes look absolutely delicious, every last one of them. I love, love, love tomatoes...pretty much any way you fix them. Thank you for sharing these.
Even though "I Hate To Cook", I might be tempted to try that tomato pie, it looks so good.
Wishing you a Happy Saturday night and a Great Sunday!
And I just bought sooo many violet tomatoes at the market :-)
Thanks so much for stopping by and for taking the time to leave such a sweet comment!! I love home grown tomatoes in the Summer but I do not have the room to grow them so I do the next best thing!! Buy them from the Amish farmer who sets up several stands at the Mini Mart down the street. There is nothing like a tomato sandwich with lots of mayo in the Summer!!
Hugs,
Deb
