Ingredients:
Four servings
4g carbs per serving
2 tsp (5g) unflavoured powdered gelatinewater
2 cups (475ml) heavy (double) whipping cream
1 tbsp. vanilla extract
1 tsp (4g) erythritol (optional)
2 tbsp. pomegranates, the seeds
fresh mint (optional)
Tip:
Flavour options abound. Feel free to try saffron, liquorice powder, lemon/orange zest, cocoa, or coffee powder (diluted in some hot water). It is recommended that you add some vanilla extract to the recipe even if you choose another main flavour. Vanilla enhances the natural sweetness of the cream and balances other flavours.

Jewel-like pomegranate seeds are extremely versatile and add a burst of sweetness to everything they're added to. Choose pomegranates with smooth, shiny skin which are heavy for their size – they'll be juicier. To remove the seeds, cut in half and, using a wooden spoon, bash the back of the pomegranate over a bowl. Pomegranate seeds can be added as a bright finishing touch to all sorts of salads, tagines and side dishes but can also star on their own.
