Red Peppers and a variety of stuffing's

If you read the post about Vitamin C here you will know that peppers are a good source of this vitamin.

This post concentrates on Red bell peppers which taste delicious however you eat them, and they are quite versatile too. These crunchy peppers can be eaten raw, where their sweetness and crunchy texture dominates. But they also work well in various dishes and recipes, and you may already have your own favourite recipe.

Here are a few of the best ways to eat red bell peppers:
Eat them raw: just cut the bell pepper in half, remove the seeds, wash it, and then eat.

Stuffed bell pepper "boats": Cut a large bell pepper in half, add your preferred source of meat/protein, vegetables, and perhaps some cheese on top. Then bake in the oven until ready.

Stir-fry: make a stir-fry using long-sliced bell peppers, beansprouts, mushrooms, snow peas, and baby corn. This common ingredient mix works well with some soy sauce, sesame oil, garlic, and ginger. Add meat if desired.


Red bell peppers provide substantial amounts of vitamin C, and they may offer further benefits through its provision of carotenoids and polyphenols. Good subject, peppers do not know because clearly they have always produced me a little suspicion, I thought unfoundedly maybe they were somewhat indigestible, over time I accept them and I like their taste and contributions.

I've been grilling veggies. OUr girls love carrots and broccoli that way. I often grill peppers, too! Especially, now it's BBQ season.

I used to make these for my ex when we were married. I think I have made them once since. I enjoyed them but when I had acid reflux the peppers gave me heartburn. Maybe now I need to try them again.

Stuffed red peppers are on the menu here tonight. I have some turkey sausage I'll use, and some vegetables - mushrooms, onions, kale - and cheese. Your variations all look delicious!

Red and green peppers are very popular for stuffing here. I like them too, but I'm worried because of their size. I\m afraid they're genetically engineered as they are all big. Hard to find small to medium peppers at our grocery stores.

Red bell peppers are so pretty, but as far as taste, I like them better while still green.

I used to make stuffed bell peppers, but I did not eat all the bell pepper that way. (I like it raw, or will eat it in chili)

Anyway, now I made a bell pepper casserole. All of us love it...and two or three of the kids friends back in their high school days loved it, too.

We eat stuffed peppers quite frequently, especially when fresh produce is available locally. We have several variations of vegetarian fillings, all delicious, a couple Asian flavoured. It doesn't get much healthier than this!
