Tomatoes ... they are a taste of summer, any time of year !

Did you know that tomatoes originated in western South America, crossed the Atlantic to Spain with the conquistadors in the 16th century, but only finally caught on in northern Europe in the 19th century. Today they are one of the most important ingredients available, and are especially indispensable in Mediterranean cookery. The skin, flesh and seeds can all be eaten, but the green leaves are toxic, so should always be discarded. You can read more about tomatoes here

I always have tomatoes in the house they can be eaten on their own, included in a favourite salad, curry or soup ... so many possibilities ... and today I am sharing four recipe suggestions you may like to try.

~ Roasted Tomato Salad ~
Sweet, roasted cherry tomatoes, spiced just right.
Sprinkled with oil, chopped scallions (spring onions), and a splash of vinegar.

It's a fresh and delicious Vegetarian / Vegan dish.

although you could use any tomato of your choice

I love tomatoes! All these recipes look so good! Unfortunately my husband doesn't like tomatoes. He'll eat them chopped up in things but not as a main course. So I might have to make a small batch just for me. Thanks!

We can easily get quality tomatoes all year round though they taste the best in summer time.

The only fresh tomatoes I will eat in the winter are grape tomatoes. They taste summertime fresh all year long.

There's nothing quite like biting into a sweet cherry tomato. Roasted tomatoes are wonderful, too. They're not called love apples for nothing.

Tomatoes are such a versatile fruit. Or is it a vegetable? Let's not start that debate all over again. Tomatoes are such versatile things that taste good however you cook or eat them. There I said it.

Plenty of tomatoes eaten here all year round especially the small ones - they are so tasty. I like them roasted with anchovies onions and garlic, then add some sun-dried tomato sauce and balsamic vinegar. Eat with pasta topped with parmesan and fresh basil leaves - quick easy and very tasty.

I love tomatoes, though it's hard to find a tasty on in Michigan in the winter -- the store ones taste like styrofoam! But I'm saving these recipes. (And the cherry/grape tomatoes are usually pretty decent.)

Strangely enough I don't really care for cooked tomatoes. I wish I did because tomato soups like the one you posted with the red bell peppers sound fabulous, but I know I won't like it. I do however love fresh tomatoes, just with a sprinkling of salt & pepper they are the perfect accompaniment to any meal. I also love fresh homemade salsa which we call Pico de Gallo, just diced fresh tomato, jalapeno, onion and cilantro..yum, try some in a grilled cheese sandwich, just delicious!

I love tomatoes. From my garden this summer, I canned 18 quarts of tomato soup, 20 of sauce, and a bunch of sun-dried tomatoes for garnishment. And from late July, when they start ripening, until late September, I eat a tomato sandwich a day! I also turn some into chow-chow (green tomato relish).
