Mediterranean Tuna Salad

Mediterranean tuna salad


I don't know about you but especially at this time of year salads do feature in my menu plans. There are so many lovely varieties and ways to serve them. I happened to spot this one which if, like me, you like Tuna may think it is especially lovely. But I'm sure if there are any ingredients you're not too keen on the recipe can be amended to suit you. So here is a touch of the Mediterranean Tuna taste ... hope you enjoy it.

Ingredients:

Serves Four
1 baby cos lettuce, leaves torn
200g red grape tomatoes, halved
1 small red onion, halved, thinly sliced
1 (Lebanese) cucumber, cut into 2cm cubes
1 green (capsicum) pepper, cut into 2cm cubes
2/3 cup drained marinated feta cheese
2/3 cup pitted kalamata olives
2 tablespoons chopped fresh oregano
2 x 185g cans (Sole Mare) Tuna in Olive Oil, Chunk Style
1/4 cup red wine vinegar
(crusty bread, to serve, optional)

Method:
1. Place lettuce, tomatoes, onion, cucumber, (capsicum) pepper, feta, olives and oregano in a large bowl.
2. Add tuna (undrained). Drizzle with vinegar. Season with pepper. Toss gently to combine. Serve.

Quite good you're getting the little fat bloke onto a Mediterranean diet at last, and a summer of salads would certainly help him in the right direction.

It's worth binning the oil in the tin, 'pure olive oil' isn't 'virgin olive oil'

Your next step is to get him off all that cheap plonk, and onto that bottled water.
Maybe he'll be waddling around again then.

I think the crusty bread would be a lovely accompaniment. I've never been one for lots of salads but I ate many more last year than I usually do so I want to continue this year. I like that you can add whatever suits you or leave out bits you're not keen on so that it's exactly what you like.

Last time we were in France we stocked up on smoked cod liver, tinned in it's own oil.
That makes a good salad.

Hope Eddie can chill out a bit, maybe getting out and about in the sun now it's here will do him good, too much stress, and too much vino isn't ever a good combo.

Hi Carla - many thanks for taking time to leave your comment. I think this is a good recipe idea which can be adapted to suit. Glad to hear you love cucumbers ... our youngest grand-daughter loves them too. She often snacks on a couple of thin slices, it's great to see.

Hi Jo - many thanks for your comments, it's always good to read them. Summer and salads just go together somehow and even better if you grow your own lettuce, cucumbers even radishes etc. Many would enjoy a slice of crusty bread or perhaps the lower carb alternative!
