Ingredients:
100 grams ground almonds
1 teaspoon baking powder
2 large eggs
1 tablespoon of melted butter
2 tablespoons of double cream
100 grams of sliced apple

Method:
Mix all dry ingredients in a bowl.
Melt the butter I used a Pyrex jug, add the eggs, cream, then add the dry ingredients and mix. Microwave in a 700watt for 4 minutes. Allow to cool and cut in half. Spread on extra thick cream and some sliced apple. Dust with with cinnamon. Serves four. Around five carbs per portion.

Go for it Eddie, I for one love the low carb sponge cakes. Favorite is the Strawberry one roll on our lovely tasting British strawberries......

Very good idea. There are quite a few tinned fruits you can use. What is wrong with ringing the changess?
