Asparagus and Halloumi Salad


With the sixth month of the year here and hopefully some nice warm summer days perhaps your thoughts are turning to salads. I saw this recipe on Diet Doctor site and with its lovely ingredients it will certainly be appearing in my summer menu plans. Have a look and see what you think.

Ingredients
Serves Four
Pesto dressing
60 ml (¼ cup) mayonnaise
2 tbsp green pesto
1 tbsp lemon juice
Salad
400 g green asparagus, woody ends removed
300 g halloumi cheese (see tip)
1 tbsp ghee or olive oil
85 g 
watercress, or arugula (rocket) lettuce
85 g baby spinach
200 g cucumber, spiralized or sliced
140 g cherry tomatoes, chopped
140 g avocados, sliced
salt and pepper
Tip
For a dairy-free substitution, (or if you do not like halloumi) replace the halloumi cheese with (1) large, poached egg, per serving.

Did you know that watercress was once considered a weed. It was first cultivated in the UK in the early 1800s but is now grown in watery beds throughout the world. It is an often overlooked leafy green that packs a powerful nutrient punch. Its small, round leaves and edible stems have a peppery, slightly spicy flavour. It is part of the Brassicaceae family of vegetables, which also includes kale, Brussels sprouts and cabbage. Read more here

Hello William, many thanks for your comment.
A little bit of information about Halloumi.
It's pronounced ha-loo-mee, and it's a semi-hard chewy, white cheese originating from Cyprus and made from cow's, goat's or sheep's milk, or a combination. It has a mild salty flavour and lends itself beautifully to cooking due to its firm texture which is retained even when cooked and exposed to high temperatures. It has become a firm favourite in our household and sometimes we just cook a couple of slices and enjoy them as a snack! However Halloumi does lend itself so well to recipes such as the one shown here.

Halloumi cheese is lovely. Also feta cheese would be just as tasty in this meal.

How about feta cheese, pitta bread and watermelon? Great in sunny summer days.

Perfect summer meal. I love halloumi cheese, but have a hard time finding it. Next time I get some this is going on my menu plan. :)

It's too bad my tomatoes and basil aren't ready for picking at the same time as asparagus is. I would love this salad, though, because I love everything in the salad, including avocados and watercress.

Pesto sauce made with parsely is sometime I need to perfect. Summer is big on parsely for me, and I want to make recipes that will enhance summer.

June is a great month. Lots of Asparagus in the shops. We like just blanche, grill, salt and black pepper and finish with butter.Fabulous.
