Low carb bread: Another fairy tale bites the dust !
Jimmy Moore never ceases to amaze me, his work rate is stunning. Everywhere I look he is promoting the lowcarb way of life. Check out this very interesting read where he takes on a bakery selling a supposedly lowcarb bread. A point to remember is Jimmy is not a diabetic and unlike most of us still has a primary insulin response.
"The words “Net carb” on the packaging is enough to make me suspicious. “Net carb” usually means that someone is trying to sell you stuff by telling you a fairy tale.

Just wonder what Jimmys thoughts would be on this bread baked by a Type 2 diabetic.

Oh my goodness, please, please THINK of eating this bread.
Here is a very nice recipe for a multiseed loaf that is good for you and wont raise your blood sugar.
150gr Mascarpone (or Creme fraiche)
4 Eggs
90gr Linseeds/flasseeds
1tbsp coconutflour
1/2 tbsp baking powder
small spoon of salt and caraway seeds
40gr sunflower seeds
70gr Butter, softened
Mix all ingredients really well together, pour into a loaf tin or even better into one of those silicon 'tins', sprinkle top with more sunflowerseeds, sesame or pumpkin seeds if liked. Bake in oven at 150C for fan ovens, or 170C without a fan, for around 45 - 60 minutes.
Spread with butter, lovely with a couple of boiled eggs in the morning or spread with butter, top with fresh chopped herbs, touch of salt.
