When I saw this recipe suggestion, I thought to myself ... what a fabulous combination of ingredients and taste. Have a look at the ingredient list below, and I think you may agree with me!This wonderful dish is by Melissa at Nourished Peach and could either be cooked as a lovely mid-week dish or even a special weekend one. I wonder when you may choose to eat it? The added joy to this dish is that the filling can be made up to a day in advance, just store it in the refrigerator, you can also roll and assemble these the night before and they store well in the refrigerator.
Here are the ingredients you will need to serve 4 - 6:
3 Tablespoons Olive Oil, divided
3 Cups Fresh Baby Spinach Leaves
4 Ounces Goat Cheese
2 Ounces Cream Cheese, at room temperature
1/3 Cup Chopped Sun Dried Tomatoes (packed in oil)
1 Large Garlic Clove, grated or pressed
11/2 - 2 Pounds Boneless Center Cut Pork Loin Cutlets, both sides seasoned with salt and black pepper
