Friday is Looking Fabulous !

Fabulous Friday could be just right for some favourite flowers ...


If you are at work then maybe you can relate to this poem by Laura Hardstaff:

F is for Friday
F: is for Friday when all the fun begins,
R: is for Rest and a couple of sneaky gins!
I: is for Insatiable, our desire for this day never ends,
D: is for Dreaming about what fun the weekend sends, 
A: is for Adventure and doing whatever one dares,
Y: is for You, no worries, work or cares.

But whatever you are doing this Friday - can I suggest a Friday Fish dinner ...


If you love fish and chips, there's no reason why you should miss out just because you have diabetes ... so says fellow blogger Lisa on her Diabetic Alien Blog. I've used many of her words and pictures for this lovely low carb meal.

As always, low carbing usually just means using alternative ingredients. So, instead of potatoes, use celeriac/celery root.

How to prepare - peel the skin with a knife (a peeler will peel it too thin) and cut off all the gnarly bits. Slice into chips and microwave for 4 minutes until just tender.

Spread the chips on baking paper and smear with butter or olive oil. Sprinkle with garlic powder, onion powder, paprika and salt. Bake until golden, then flip each chip over and sprinkle again and bake.


The fish Lisa used was barramundi *, which she coated in coconut flour and shallow fried. To serve - sprinkle with lemon pepper, a lemon wedge and tartare sauce. Celeriac contains only 3 grams of carbs per 100 grams. And no horrible stodgy feeling in the stomach after eating either.

* Barramundi is similar to premium fish like red snapper, striped bass, and Dover sole. 

And for some Friday Fizz you could always add a glass of sparkling Pellegrino

That looks delicious, it's made my mouth water for fish and chips. I think Friday is my favourite day of the week, the whole weekend lies ahead, though I don't know why I still feel this way now that I don't work.

Cheerful flowers for Friday and an inspiring poem! Not growing up eating fish my husband and I will order it when out at a restaurant; fish and chips is a favourite treat to have occasionally.
