Serves Four
50g/2oz black Kalamata olives
3 medium tomatoes, diced into 2cm/¾in cubes
1 cucumber peeled, diced into 2cm/¾in cubes
1 red pepper, de-seeded, diced
½ red onion, sliced finely
100ml/3fl oz extra virgin olive oil
150g/5oz feta, diced
1 small, firm cos lettuce, chopped into rough cubes lengthways
1 generous sprig of oregano (or 2 tsp dried oregano)
50ml/3 tbsp red wine vinegar
Method
Mix all the ingredients in a bowl, and then divide/serve in four bowls.

Romaine, or Cos lettuces as they are also known, have a long, oval head of tightly packed crisp leaves.
Little Gem is a miniature version.Cos Lettuce is believed to have originated on the Greek Island of Kos.
Romaine (Cos) lettuce is an excellent source of vitamin A (in the form of carotenoids), vitamin K, folate and molybdenum. In addition, romaine lettuce is a very good source of dietary fibre, manganese, potassium, biotin, vitamin B1, copper, iron and vitamin C. It is also a good source of vitamin B2, omega-3 fatty acids, vitamin B6, phosphorus, chromium, magnesium, calcium and pantothenic acid.
Romaine (Cos) lettuce will keep for five to seven days. To clean lettuce, first remove the outer leaves and with one slice cut off the tips of the lettuce since they tend to be bitter. Chop the remaining lettuce to the desired size and discard the bottom root portion. Rinse and pat dry or use a salad spinner if you have one available to remove the excess water.

wow am surprised how much goodness there is in a humble lettuce! I am growing them in flower pots in the garden and was starting to get annoyed with them as they are demanding a lot of watering - I will treat them with respect!
Romaine has gotten a bad rap here in the states because so much of it has been recalled. I love it, though, and I especially LOVE feta cheese. This sounds great.

Greek salads have everything a good salad should have: veggies, olives, feta, olive oil. I like my salad with the ingredients cut in small cubes and bits which is unlike the greek one where things are in a somewhat bigger format.

I love salads, but don't have them as often as I would like even though I have a huge farmer's market like fruit stand down the block. Too many people there for me in this age of Covid. So we shop once a week at the supermarket and I pick up enough salad for at 3 days a week.

Very good advice folks. Of course the really easy way is to jump on a plane and fly to Greece where we can eat Greek salad every day, 5 weeks on Friday unless Al Johnson and Matt Handcock think other wise.
Salad are simple and easiest food to prepare. But the dressing is something that you need to work on. Good thing, El Greco, a greek food restaurant, offers good salad dressing that is also perfect for greek salads. They also have rotisserie chicken, pita wraps and kebabs in their menu.
