2 1⁄3 lbs (1 Kg) chicken thighs (bone-in with skin)
3 tbsp olive oil
2 tbsp Italian seasoning
½ tbsp salt
½ tbsp ground black pepper
2 tsp garlic powder
Dijon lemon dressing
The juices from the chicken
¼ cup (60ml) olive oil
½ lemon, juice and zest
½ tbsp Dijon mustard
salt and ground black pepper to taste

12 oz. (350g) tomatoes, cut into wedges (about 4 oz. per tomato)
4 oz. (110g) leafy greens

This looks very good...and healthy. My daughter was on keto for awhile, but an unhealthy keto. Stuffed herself with lots of cold cuts, tons of bacon, and all these rich fatty cream sauces. Only fruit she basically ate was asparagus wrapped in bacon. Put her in the hospital three times before she finally gave up on it. But hers was not a healthy keto.
Dijon mustard adds a lift to a whole range of dishes doesn't it? It is a staple in my store cupboards.

I appreciate your comments on my blog, and I usually look at your blog but don't say much. My approach to healthy cooking is so different from yours, so the recipes aren't the kind that I would use. I'm more of an omnivore, though for the moment I'm not buying meat. Your chicken salad today does sound quite nice.

If other readers are interested the recipe Annie is referring to is Hunter's chicken, which is an Italian tomato stew also known as chicken cacciatore. It's a pub classic that's very easy to make at home.
