Goodness! It's Sunday! I hope you are all having a good weekend. Here in the UK many of us have been enjoying some lovely sunshine and warmer spring-like days. Some (but not all) of our schools are now on their Easter Holiday Break and the children no doubt looking forward to receiving some Easter Eggs! With chocolate in mind I thought it a good idea to share this recipe for a low carb Chocolate Pound Cake, it's made with coconut flour ... can I cut you a slice!

"Because coconut flour is used in this recipe, the net carbs are super low and perfect for those on a ketogenic diet. Another plus? Since the price of almond flour has steadily climbed higher, coconut flour is becoming the more economical choice."
Ingredients
Serves 12
2 net carbs per serving.
Dry Ingredients
3/4 cups (70 g) (Bob's Red Mill) Coconut Flour
1/2 cup (115 g) Sukrin 1 (or Swerve Granulated)
1/4 cup (25 g) unsweetened cocoa powder (sift before measuring)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon instant coffee or espresso, optional
1/2 teaspoon salt
1/4 teaspoon xanthan gum
Wet Ingredients
6 large eggs
1/2 teaspoon vanilla
1/2 teaspoon stevia glycerite or more to taste
2 teaspoons vinegar
Melt together
4 ounces (1 stick/ 113 g) salted butter, melted (or coconut milk)
1 ounce (28 g) unsweetened baking chocolate, chopped
Optional Topping
2 tablespoons (Lily's) Sugar-Free Chocolate Chips

With regards to xhantan gum, which I see in the recipe, I have heard it has been approved by the U.S. Food & drug administration as safe in foods.
I will give it a try :-)

Puff, that's one of my vices, chocolate, I'm addictive if I eat or have dinner and I don't drink some chocolate it seems that I'm not satisfied, that I'm missing something.

I made a chocolate loaf cake with coconut flour once and I love the chocolate and coconut taste. Thanks for reminding me. I'm printing this off as I have no idea where the other recipe I used went to. Happy end of your weekend and start to the new week Jan.
