Chocolate Mess With Berries and Cream : Low Carb


Couldn't you just tuck in! This dish contains some dark chocolate cake, whipped cream, nuts and berries. You may think it contains a lot of carbs - well you'd be wrong. It's actually 9g carb per serving. I think a low carb dessert like this could be a huge success on any festive, or special occasion... Yum!

You could always try it out this weekend in preparation for the Christmas or New Year festivities ... now there's a thought!

Ingredients:
Serves Four
9g carb per serving

240 ml mixed berries
¼ teaspoon vanilla extract
2 tablespoons lime juice
¼ dark chocolate cake
30 g pecan nuts, chopped
2 tablespoons roasted unsweetened coconut chips
240 ml heavy (double) whipping cream or crème fraiche


Dark chocolate cake
250 g dark chocolate with a minimum of 70% cocoa solids
150 g butter
5 eggs
1 pinch salt
1 teaspoon vanilla extract

Dark chocolate is loaded with fibre and antioxidants, as well as minerals such as iron, magnesium, copper and manganese. Plant compounds in dark chocolate have been shown to lower blood pressure, protect against heart disease, improve brain function and protect the skin against the sun’s harmful UV-rays. To make the most of the health benefits, it is recommended to eat dark chocolate with a cocoa content of 70–85% or higher. A piece of dark chocolate is especially delicious when enjoyed with a good cup of coffee.

Bottom line: Dark chocolate contains high amounts of fiber, antioxidants and minerals. It may reduce the risk of heart disease, improve brain function and protect the skin from the sun.

It does look lovely, reminds me to buy some fruit for tea, already hankering after fresh stuff. Said to my OH winter food seems to all come wrapped in pastry , from mince pies to pork pies all a little to much for me.
