Crustless Asparagus Quiche : Great Low Carb Food



Yes, fresh asparagus is great ... fresh green beans are great, lets face it fresh vegetables are really good and we each have our favourites. However, on the odd occasion, I do sometimes use frozen or tinned ... like in this recipe.

Ingredients:
Serves 2-4
6 eggs
6 tablespoons of double (heavy) cream
One tin of whole asparagus spears 244 grams
1 heaped tablespoon of Jalapenos green peppers for extra zap* optional
Salt and pepper to taste.

Method:
Mix the eggs and cream together well in a bowl or Pyrex jug
Pour into a non stick baking dish 8" x 1.5"
Place the asparagus spears and optional Jalapeno green peppers
Place into a pre heated oven at 190C / Gas 5 and cook for twenty minutes.
Serve with a mixed salad.
Great low-carb food.

Check that the quiche is properly cooked by placing a knife in the centre, it should come out clean.
Also, as ovens vary just keep an eye on the quiche while cooking.
This quiche tastes delicious eaten hot or cold.

Asparagus is at the Farmer's mkt now and I cooked some last night. This quiche would be delicious! I make mine with buttermilk and it works surprisingly well! Happy to visit you today. Good morning Jan!:) Lovely to see you again. Thank you for another great recipe. I have taken note and will definitely try it out, as we both like asparagus and eggs. Does it freeze well? I'm asking because a friend of ours who comes to stay with us every year, will arrive soon, and I have been cooking for the freezer, so we will have more free time to chill out together.

Jan, I couldn't find a cow creamer I liked, but I did buy two super hand painted mugs, and four pretty egg cups instead.:)

I love quiche, but hate asparagus. I could substitute with zucchini and tomatoes.

Asparagus I love. We had lots in Menorca plus asparagus soup. And now it's coming into season here. Pity about the strange after effects but it's worth it to eat this delicious treat.

Asparagus is not to everyone's liking. How about making this with zucchini (courgettes), spinach, broccoli or peas! We sometimes have a mixed vegetable quiche, it's just so tasty!
