Chicken and Courgette (Zucchini) Curry Soup : Low Carb


This recipe is from Pascale Naessens, (pictured below), she says the warm and inviting scent of curry that fills the kitchen when you make this fresh low-carb soup is irresistible. Tender chicken and crispy courgette/zucchini are the stars of this coconut-infused flavour wonder!

Ingredients
Serves Two
2 tbsp. olive oil, divided
2 garlic cloves, minced
2 white onions, finely chopped
¾ cup (175ml) coconut milk
2 cups (475ml) water
3 tbsp. green curry paste
1 tbsp. fresh parsley or fresh cilantro, finely chopped
1 lb (450g) boneless, skinless chicken breasts, cut into small pieces
1 large courgette (zucchini)

salt and ground black pepper
