Thursday Three : Low Carb Recipe Suggestions (3)

Here we are with another 'Thursday Three' of lower carb recipe suggestions.

Christmas Wreath Salad
Ingredients
Serves 8
250 grams mixed lettuce leaf
½ small red onion finely sliced
300 grams cherry tomatoes (mini mozzarella)
1 cup basil leaves
Dressing Ingredients
¼ cup extra-virgin olive oil
4 tablespoons fresh lemon juice or 2 tablespoons balsamic vinegar
½ teaspoon salt
½ teaspoon freshly ground black pepper
1 clove garlic minced

Braised Beef with Red Wine and Cranberry
Ingredients
Serves 4
1kg braising steak
3 onions ( I usually use red ones)
300ml red wine
300ml stock
3 rounded tbsp cranberry sauce (check sugar/carb content if using shop bought)
Serve
with vegetables of your choice
lower carb choices could be cauliflower rice, mashed swede,
fine green beans are also nice.

Vanilla Panna Cotta
Ingredients
Four servings
4g carbs per serving
2 tsp (5g) unflavoured powdered gelatine
water
2 cups (475ml) heavy (double) whipping cream
1 tbsp. vanilla extract
1 tsp (4g) erythritol (optional)
2 tbsp. pomegranates, the seeds
fresh mint (optional)

The beef sounds and looks very yummy. I made cookies yesterday. Broccoli-cookies, just suitable for cold days, too (3C here).

What a marveluos Christmas salad! I had it several times. Moreover, that salad shows the colours (green, red and white) of the Italian flag :-))) I also had panna cotta which you mentioned.

The dressing recipe sounds wonderful.

My boss made this dressing one time and it did not look appealing to me but I thought I would try some to be polite. I totally loved it. I ask the ingredients and she told me but not the proportions. I always meant to ask that but did not till years later and then she could not even remember the dressing I was talking about.
