Serves Four
1 tbsp olive oil
½ cup (2¾ oz.) red onions, diced
2 garlic cloves, crushed
1 lb ground beef
1⁄3 cup red bell peppers, diced
1⁄3 cup green bell peppers, diced
2 tsp ground cumin
1 tsp chili powder
2 tsp tomato paste
1 cup (8½ oz.) canned whole tomatoes
1 cup (4 oz.) shredded cheddar cheese
salt and pepper to taste
For serving
½ cup sour cream
2 tsp fresh cilantro, chopped

Some Tips
i) To reduce dishes, you can also cook the beef and vegetables in an oven-safe skillet. When the beef is browned, simply top with cheese and place into the oven.
ii) Using both red and green peppers adds flavor, but if you prefer, you can just use one or the other.

I like chili, especially in the winter, but I always include beans. To be honest, beans are what makes up most of what's in my freezer...
We do like a similar chili, and often add some grated cheese to the bowl before serving it. Making it into a casserole is a good idea.

Can't beat a good chilli for winter days. My own version is much the same but without the cheese, and maybe paprika, oregano and lots of garlic. Good quality beef is essential. From a local butcher, not a supermarket.

Sounds tasty! And I always like reducing the number of pans, dishes, spoons, etc, I use. Washing up is not my favourite part of cooking!
