Tomatoes ... a taste of summer, any time of year !

Did you know that tomatoes originated in western South America, crossed the Atlantic to Spain with the conquistadors in the 16th century, but only finally caught on in northern Europe in the 19th century. Today they are one of the most important ingredients available, and are especially indispensable in Mediterranean cookery. The skin, flesh and seeds can all be eaten, but the green leaves are toxic, so should always be discarded. You can read more about tomatoes here

I always have tomatoes in the house they can be eaten on their own, included in a favourite salad, curry or soup ... so many possibilities ... and today I am sharing three recipe suggestions you may like to try.

~ Roasted Tomato Salad ~
Sweet, roasted cherry tomatoes, spiced just right.
Sprinkled with oil, chopped scallions (spring onions), and a splash of vinegar.
Mmmm... tastes like summer.

Four servings
3 tbsp olive oil
1 lb cherry tomatoes
1 tsp sea salt
½ tsp ground black pepper
½ cup (1¾ oz.) finely chopped scallions
1 tbsp red wine vinegar
Chop the tomatoes in rough pieces if you prefer a more salsa-like salad.
or, throw on some crumbled feta for extra flavour.
It's a perfect side for virtually anything grilled.

Wonderful post because I love eating tomatoes all year round. Of course, in the summer they are the tastiest. Yesterday for lunch I had a delicious tomato soup with the addition of Italian pasta.
Hugs and greetings.

Deliciosas recetas Eddie. Me encanta el tomate, pero nos hemos acostumbrado a los nuestros y pocos compro ahora. Si compro en lata para hacer salsa, vienen triturados. En Extremadura es muy popular la sopa de tomate, se come con higos.
Un abrazo.

Delicious recipes Eddie. I love tomatoes, but we have gotten used to ours and few buy now. If I buy canned to make sauce, they come crushed. In Extremadura, tomato soup is very popular, eaten with figs.
A hug.

I lean most towards the second - but would leave out the coriander leaves (personal preference). How I wish that store bought tomatoes tasted a fraction as good as home grown ones.

All looking delish! I have to say, winter tomatoes here are pretty tasteless. I'm always glad I've made my tomato sauce in the fall with the fresh ones and frozen it. But roasting helps.

Three yummy recipes, and if you use home grown tomatoes, all the better as I don't think there's any taste quite so delicious. It'll be time to start the seeds off soon.

This week I made a huge pan of tomato and lentil soup with chick peas + the usual bits and bobs. So good we ate it for two days and froze the rest for cold days ahead. Don't forget the garlic folks.

You can't beat a summertime tomato, but I eat them year 'round anyway.
