Cauliflower Low Carb Mash ... flavour it your way !




Cauliflower is an extremely healthy vegetable. It is very low in calories yet high in vitamins, and can provide some powerful health benefits, and is a great source of nutrients. In fact, cauliflower contains some of almost every vitamin and mineral that you need, including a few that many people need more of. Additionally cauliflower contains unique antioxidants that may reduce inflammation and protect against several diseases, such as cancer and heart disease. What’s more, cauliflower is easy to add to your diet. It’s tasty, easy to prepare and can replace high-carb foods in several recipes. 

How about this suggestion... you can jazz up your low-carb mashed cauliflower - four ways. Curried, buttery, mustard and cheesy. See how you can flavour individual portions easily! It keeps the entire family and any picky eaters happy!



Cauliflower Low Carb Mash

Ingredients

Basic Mashed Cauliflower
1 large cauliflower cut into small chunks
your choice of flavourings below
1 tbsp. butter
pinch salt to taste

Cheesy Mashed Cauliflower
1/4 cup grated/shredded cheese of choice
pepper to taste

Curried Mashed Cauliflower
1 tsp curry powder
2 tbsp. coconut cream
1 tsp desiccated coconut to garnish

Buttery Mashed Cauliflower
additional butter
pepper to taste

Mustard Mashed Cauliflower
1/2 tsp mustard powder

I didn't think I'd like mashed Cauliflower as well as I do mashed Potatoes ---but I DO.... It's delicious... We season ours with some sour cream and green onions and chives.... YUMMMMMMM....

I replaced cauliflower for potatoes before and no one knew the difference. It's much healthier than potatoes, too.

I'm taking a few minutes to go online while dinner cooks - and there is a cauliflower mash happening with garlic and cream - like an alfredo sauce. These ones you've featured also sound delicious!

Mustard does seem to enhance cauliflower but I've never tried curry. We both love cauliflower soup and use chicken broth instead of dairy in it as my husband can't handle lactose. And about once a year I make Dinah Shore's Cauliflower Pie, two of them. One with cheddar cheese for me and goat cheese for him. But they do have a potato crust.

Some good ideas for a cauliflower hater there Jan. That's me as you may remember. the mustard might be best for me but I may have to add extra mustard and curry powder. Have a good weekend down there but I don't think the weather is warming just yet.
