This colourful low carb (keto) plate of salad is full of flavour and can be enjoyed whatever the season!
With salmon, feta cheese, mint, and onion plus cherry tomatoes, cucumber and olives all topped with a home-made avocado dressing, this salad has the taste and texture to become a favourite.

8 cherry tomatoes, diced
4 oz. (110g) cucumber, diced
4 oz. (110g) feta cheese or goat cheese, crumbled
½ Romaine (Cos) lettuce, cut into bite size pieces
¼ red onion, sliced
1 oz. (30g) olives (preferably Kalamata)
1 tbsp. lemon juice
2 tbsp. fresh mint roughly chopped
½ lemon, slices for serving (optional)
