A P R I L : Recipes Part One

I thought I'd have a play on the letters that make up April,
and choose a favourite food from each!
So starting with:-

A is for Apple Crumble
this is a low carb recipe
Ingredients
Serves 8
6 (Granny smith) apples, peeled and sliced
50g Butter
1 cup Almond meal
1 tbsp. Natvia
Optional
½ cup chopped nuts or Crunchy Grain Free Granola

P is for Peppers
Bell Peppers can be colourful with Green, Yellow, Orange, or Red to choose from
Feta Cheese Stuffed Bell Peppers
this vegetarian low carb recipe suggestion uses green peppers
Ingredients
Serves Two
2 green bell peppers
11 oz. / 300g feta cheese
10 green olives pitted and chopped
2 eggs
½ tablespoon dried mint
1 teaspoon hot sauce

R is for Rhubarb
and a delicious lower carb dessert recipe
Rhubarb Fool
did you know that fruit fool is a classic English dessert
Ingredients
Serves Four
350g/12oz rhubarb
55g/2oz (sugar) equivalent sweetener of your choice
1 orange, juice only
water
150ml/¼ pint cream, whipped
1 egg white, beaten until peaked

I like your apple and pepper choices. I'm not fond of rhubarb. For me: avocado toast, pear salad or peach cobbler, and ramen noodles.

Not much into sweets but the Apple Crumble screams for the vanilla ice-cream I found (it must be over a year old, hope it´s still good).
Added to favs, thank you :-)
And stuffed peppers, it´s about time again, too!
A... Ananas. Oh, you call it pineapple. Avocado!!! Anything with that (if only we got good ones here!)
P... armesan... hmmmm
R ...aclette!!!
Now I´m hungry.
