Tuesday Christmas Trio : Low Carb Christmas Cake Suggestions (16)

Orange and Gingerbread Cheesecake : Low Carb
The crispy gingerbread crust cradles a luscious orange-vanilla filling
that doesn't require baking.

Ingredients
Makes 16 servings
5g net carbs per serving
Gingerbread crust
2 cups / 230g / 8oz almond flour
110 g / 4 oz butter, melted
¼ cup /1¾ oz / 60 ml / 55 g erythritol
¼ tsp salt
2 tsp ground cinnamon
2 tsp ground ginger
2 tsp ground cloves
Orange filling
900 g / 2 lbs cream cheese
1 cup / 240 ml heavy (double) whipping cream
¾ cup / 5½ oz / 180 ml / 160 g erythritol
2 tsp vanilla extract
1 orange, the zest
Garnish
1 orange, peeled and cut into smaller pieces (optional)
2 tbsp pomegranates (optional)
1 tbsp fresh mint (optional)

Recommended special equipment
Springform pan, 9" (23 cm)
A handheld or stand mixer
No-bake cheesecake
You can save time by not baking the crust. Simply pour the filling into the unbaked crust, and put it in the refrigerator straight away. The crust will not be as crunchy, but will have a consistency more like cookie dough.


Fruit Cake A Low Carb Alternative
Could be just right for Christmas
Ingredients
5.4g per serving
170g Cranberries (dried)
½ cup Rum/brandy/gin
½ cup chopped Nuts (walnuts, Brazil)
1½ cups Almond meal
1 tbsp Natvia (or sweetener of your choice)
1 tsp Cinnamon

¼ cup Butter
1 tsp Vanilla essence
1 tbsp Almond essence

Clementine Almond Cake
Low Carb, Flourless, Gluten Free

This is a lovely everyday cake - spongy, not-too-sweet, and just a touch bitter in the absolute most perfect way possible - as it contains no flour, it is also a lovely gluten-free cake recipe. Why not make one for the coming holiday season!

Ingredients
Serves 10
4 clementine's (about 13 oz.)
6 large eggs
1/2 cup erythritol + 1/2 cup granulated Splenda OR 1 cup Swerve sweetener
2 1/4 cups of ground almond meal (or 9oz of almonds finely ground)
2 teaspoons pure almond extract
1/2 teaspoon (kosher) salt
1 heaped teaspoon baking powder

Tuesday Christmas Trio : Low Carb Salad Recipe Suggestions (15)

I don't know about you but even though 2020 has not been the best of years and we have all been under Covid 19 worries and restrictions the days, weeks and months have still gone by so quickly. Christmas is now a matter of weeks away so with that in mind I'm sharing three different salad ideas which you may like to serve over the holiday season.

Christmas Wreath Salad
Ingredients
Serves 8
250 grams mixed lettuce leaf
½ small red onion finely sliced
1 cup bocconcini
300 grams cherry tomatoes (mini mozzarella)
1 cup basil leaves
Dressing Ingredients
¼ cup extra-virgin olive oil
4 tablespoons fresh lemon juice or 2 tablespoons balsamic vinegar
½ teaspoon salt
½ teaspoon freshly ground black pepper
1 clove garlic minced

Instructions
1. Mix the salad greens. ½ the basil leaves and the onion in a large bowl. Mix all of the ingredients together for the dressing in a small jar and pour over the salad green mix, retaining a couple of tablespoons to drizzle over the salad.
2. Place the mixed salad greens into a wreath shape on a flat serving dish.
3. Garnish with tomatoes and basil leaves, creating mistletoe like shapes around the wreath. Dot with bocconcini balls. Drizzle with the remaining dressing.

Christmas Salad
Ingredients
Serves 10
6 clementine's, peeled
3 avocados, halved and de-stoned
112.5g watercress, washed
120g smoked salmon, torn into pieces
juice of 1 lemon
1 tbsp. olive oil, for drizzling

Instructions
1. Slice each clementine horizontally into thirds. Use a spoon to scoop out the flesh from each avocado half and slice evenly.
2. Toss the clementine's and avocado with the watercress and scatter on a plate.
3. Top with the salmon.
4. Drizzle with freshly squeezed lemon juice and olive oil, and sprinkle on freshly ground black pepper.

3.6g carbohydrate 0.5g fibre 4.3g protein 10.1g fat

Christmas Slaw
Ingredients
Serves Six
For the salad
2 carrots, halved
½ white cabbage, shredded
100g pecans, roughly chopped
bunch spring onions (scallions), sliced
2 red peppers, de-seeded and sliced
For the dressing
2 tbsp maple syrup
2 tsp Dijon mustard
8 tbsp olive oil
4 tbsp cider vinegar
Instructions
1. Peel strips from the carrots using a vegetable peeler, then mix with the other salad ingredients in a large bowl.
2. Combine all the dressing ingredients in a jam jar, season, then put the lid on and shake well.
3. Toss through the salad when you’re ready to eat it. 
Recipe Notes
The salad and dressing will keep separately in the fridge for up to four days.

This Tuesday Trio of recipe suggestions definitely has more of a vegetarian theme. 
Vegetable dishes and a carrot cake, read on and see if you'd like to try one, or all, of these ideas.


Red Roasted Carrots
Somehow the colour is just right for Autumn, and they are simply delicious. 
Ingredients
half teaspoon each of
cinnamon, paprika, chili powder, garlic powder and sea salt
5 or 6 diagonally (oval) cut carrots

Cauliflower, Leek and Cheese Gratin
A recipe for a creamy side dish , cauliflower and leek gratin,
baked in a cheddar cheese sauce with thyme, it's a popular dish.
Ingredients
30g butter
30g plain flour
400ml whole milk
3 tbsp. double (heavy) cream
100g mature Cheddar, grated
1 leek, cut into chunks
Medium head of cauliflower, broken into equal-size florets
Few thyme sprigs, leaves picked

A low carb carrot cake makes a fabulous treat with your morning tea or coffee, 
and also works well as a dessert.
Ingredients
3 cups grated carrot
5 eggs
1 cup Butter melted
3 tbsp Natvia (granulated)
1 ½ cups Almond meal/flour
2 tsp Baking powder
1 tsp Cinnamon
½ cup Chopped walnuts
1 tsp Mixed spice
2 tsp Vanilla essence

This LCHF Vegetable Frittata is a great addition to any low carb recipe collection. 
If there are any leftovers - just keep them for tomorrow's lunch!
Ingredients 
Serves Four (but can easily be amended to suit)
1 cup Broccoli floweret's and stalk
1 cup Cauliflower floweret's and stalk
1 Zucchini (courgette) sliced into 2 cm slices
½ cup Mushrooms sliced (not too thinly)
1 small onion sliced into large pieces (quartered)
1 tbsp. Butter
1 cup Cream
4 Eggs
1 tbsp. Mustard, wholegrain (optional)
Salt and pepper
¼ cup Cheese, grated (cheddar works well)

perfect as a hearty breakfast, or a quick keto/low carb lunch or dinner.

Vegetable Packed Bobotie
This South African classic is a family favourite and a brilliant 'vessel' for secret vegetables!
This version is quite mild in flavour,
but you can always add a little more curry powder to spice it up should you wish.

5 tablespoons butter
1 onion, chopped
2 carrots, peeled and chopped
1 red pepper, seeded and chopped
1 cup grated courgette (zucchini)
1 tablespoon grated fresh ginger
3 cloves garlic, crushed

2 teaspoons ground coriander

Cheese and Onion Pork Chops
Enjoy (British) pork with melted Cheshire cheese and a kick of English mustard.
This is such an easy dish, a family favourite!
Ingredients

4 pork chops
2 tsp olive oil
1 tsp English mustard
4 tbsp. caramelised onions, from a jar (make your own if preferred)
50g Cheshire cheese, grated

Courgette / Zucchini fritters ... with a red cabbage and beet salad
These courgette/zucchini fritters are a delight, and popular with vegetarians,
although you don't have to be vegetarian to enjoy this recipe suggestion!
Ingredients

1½ lbs / 700g courgette/zucchini
2 eggs
1 cup / 225ml grated/shredded cheese
2 teaspoons ground psyllium husk powder
1 teaspoon dried mint
1 teaspoon onion powder
4 tablespoons light olive oil or coconut oil

3½ oz. / 100g beets, thinly cut

This low carb citrus custard dessert, or posset recipe,
is a conversion of the classic British custard recipe.

(Blueberries, blackcurrants and strawberries)
60 grams of 90-95% cocoa dark chocolate

One large shot of brandy
A handful of almond flakes and broken walnuts

a very tasty low carb trifle, it’s quite a favourite with us and the family


Ingredients
Serves 6-8
100 grams of ground almonds
1 teaspoon of baking powder
2 large eggs, beaten
1 tablespoon of melted butter
2 tablespoons of double (heavy) cream
A 500g pack of frozen low-carb summer fruits ... thawed

(I use ones that are 4.1g carbs per 80g serving)
300ml of extra thick cream
A handful of toasted flaked almonds
2 x 12.5 grams of instant raspberry, sugar free, jelly crystals

Light lunch, or an easy starter, these simple winter flavours combine well and make a colourful dish.
The remoulade, uses celeriac, carrot, and fresh dill. Serve it with some charcuterie.
You may find that many supermarkets have an even better selection at this time of year!

Roasted Vegetables Tricolore
This is a beautiful, and most colourful, side dish. Easy-to-make with lots of good flavour.
Choose to serve it with either meat, chicken or fish ...
But perhaps if you just like vegetables, enjoy the dish by itself!

Ingredients
Serves Four
6g carbs per serving
300 g brussels sprouts
150 g cherry tomatoes
150 g mushrooms
2⁄3 teaspoon sea salt
1⁄3 teaspoon ground black pepper
2⁄3 teaspoon dried rosemary or dried thyme
80 ml olive oil

Celeriac and Walnut Gratin : Vegetarian 
This dish does make a great vegetarian main meal, or you can have it as a side dish

Ingredients
Serves 4 - 6
4g carbs per serving
1 large celeriac
2 tbsp. walnut oil
300ml vegetable stock*
handful chopped walnuts
100g blue cheese, such as Bleu d'Auvergne or Stilton
(* you can also reduce the amount of vegetable stock slightly and add crĆØme fraiche,
it makes for a slightly creamier texture)

Green Beans with Garlic and Almonds : Low Carb Side Dish
This is a wonderfully green, crispy and crunchy low-carb side dish.
Green beans always go great with a nice Sunday roast, or perhaps a Thanksgiving, or Christmas turkey!

Ingredients
Serves Six
7g carbs per serving
4 garlic cloves
3 tablespoons butter
3 tablespoons olive oil
700 g fresh green beans
½ teaspoon sea salt
¼ teaspoon ground black pepper
80 ml almonds, chopped
