Something a little bit different - Strawberry and Spinach Salad

Well, how about this for something a little bit different. It's a delicious salad made by mixing strawberries, some spinach and even some bacon! It's a cornucopia of great tasting foods - why not have a look at the recipe and give it a try. You've got to agree it looks very colourful. STRAWBERRY SPINACH SALAD
She tells us "Once I had my first salad with fruit incorporated into it, I was instantly hooked. Strawberries are my favorite fruit to mix into salads. The bacon in this recipe gives this salad the perfect blend of sweet and salty. I serve this with the Balsamic Shallot Vinaigrette."

INGREDIENTS
10 oz. Fresh Spinach Leaves
6 Slices Thick Cut Bacon – Cooked Crisp and Crumbled
2 Roma Tomatoes – Diced
4 oz. Feta Cheese – Crumbled
2 oz. Almonds
2 oz. Red Onion – Thinly Sliced
8 Strawberries – Sliced

DIRECTIONS
In a large mixing bowl, combine spinach, bacon, tomatoes, feta cheese, almonds, red onions, and strawberries. Toss until all ingredients are well mixed.

Prep Time – 15 Minutes
Cook Time – 5 Minutes

Makes Servings: 4

Carbs – 8 net g
Fat – 16 g
