Nothing says summer like a scoop of creamy, oh-so-delicious ice cream. Make your scoop satisfying, simple, and sugar free with this low carb/keto version! Why not add a few low carb berries, strawberries are nice!
Ingredients:
Two Servings5g carbs per serving
2 egg yolks
1¼ cups (300ml) heavy (double) whipping cream
½ teaspoon vanilla extract
2 tablespoons erythritol (optional)
2 egg whites
Instead of vanilla extract, you can also use vanilla powder or vanilla bean. Just split the bean lengthwise, scrape out the pods, and boil with the cream.
Feel free to get creative and add other favourite flavours. Cocoa, liquorice powder, berries, roasted nuts and coconut flakes are all great choices!

Strawberries are indeed a delight,and like fruits in general, are packed with nutrients.The problem is we have to limit them because of the sugar content.
Love ice cream but the issue is since my by pass surgery I can only handle a few bites. I picked up a milk shake the other night and proceeded to wolf it down...and I paid! Dumping effect and all...
