Cover With Strips Of Bacon And Sprinkle With Parmesan


INGREDIENTS:
Serves 12
1 spring onion sliced
2 crushed garlic cloves
750g / 1.6 lb mince/ground beef
750g / 1.6 lb mince/ground pork
2 eggs lightly beaten
handful fresh chopped parsley
handful fresh chopped basil
2 slices bacon diced
30g / 1 oz chopped sun-dried tomatoes (optional)
2 tsp dried oregano
+/- salt and pepper to taste
grated vegetables of choice can also be added
slices of bacon to cover the meatloaf


Optional - if not paleo you can add 100g / 3.5 oz grated cheese of choice to the meatloaf mixture

INSTRUCTIONS:
Oil and line a baking tray before starting.
Put all the ingredients in a large mixing bowl and mix together with your hands until all the ingredients are thoroughly incorporated together.
Form into a large meatloaf shape on the lined baking tray. Cover with the bacon slices and sprinkle on parmesan cheese (optional).
Bake at 180C/350F for 50 minutes or until thoroughly cooked in the centre.

NOTES:
* Nutrition values do not include vegetables you may choose to add. You will need to make additions for those.

The paleo diet is just a little to much fat for me to be comfortable with. I hope further research will prove it is safe and effective.

Hello there Roses and Lilacs, and good to read your thoughts and comment. We do all have to choose our food template and take into account any allergies, underlying health issues etc we may have or wish to avoid. If you are a diabetic most find it beneficial to choose a LCHF food template as this doesn't spike blood glucose numbers. I also choose this because I believe eating too much processed foods, too many carbohydrates and sugar just doesn't do our bodies any favours and may help prevent diseases such as Alzheimer's. There have been various reports and studies regarding this many of which are highlighted on this blog and the inter-web.

This sounds very doable but I have never made a meatloaf this way. I use the old traditional = not so good for you recipes and have added bacon on top to boot!! Bacon is an awesome choice for the top of a meatloaf, any way you make it!!

I love meatloaf and having bacon added to it would only mean it tasted even better... and your are right it is a great way to add vegetable to it without your children even being aware xox
