Friday Night Fish The Low Carb Way : With Fizz Optional !


If you love fish and chips, especially on a Friday night. There's no reason why you should miss out just because you have diabetes.......so says fellow blogger Lisa on her Diabetic Alien Blog. I've used many of her words and pictures for this lovely low carb meal.

As always, low carbing usually just means using alternative ingredients. So, instead of potatoes, use celeriac/celery root.

How to prepare - peel the skin with a knife (a peeler will peel it too thin) and cut off all the gnarly bits. Slice into chips and microwave for 4 minutes until just tender.

Spread the chips on baking paper and smear with butter or olive oil. Sprinkle with garlic powder, onion powder, paprika and salt. Bake until golden, then flip each chip over and sprinkle again and bake.



The fish Lisa used was barramundi *, which she coated in coconut flour and shallow fried. To serve - sprinkle with lemon pepper, a lemon wedge and tartare sauce. Celeriac contains only 3 grams of carbs per 100 grams. And no horrible stodgy feeling in the stomach after eating either.

* Barramundi is similar to premium fish like red snapper, striped bass, and Dover sole. 

And for some fizz you could always add a glass of sparkling Pellegrino

It looks lovely. We always used to have fish on a Friday when I was a child. We're out for a meal tonight, it's Mick's birthday.

Times do change. When growing up it was always a Friday tradition to have fish. I can remember my Mother peeling potatoes and cutting chips. They were very tasty. Nowadays the celeriac type are a very good alternative. Especially important if you are a diabetic and need to carefully control your blood sugar numbers.

I do like fish but not always on a Friday. Very often serve a healthy fish plate on a mid-week.

I've never eaten celeriac, I'm curious to try it. I don't think I have ever encountered it. I am off to the vege market soon so I will look out for it. It might be a bit too exotic for a small town market but no harm in asking!
