Have a Happy Tuesday

Some people often feel Tuesday's can be a funny day? The day after Monday and the day before mid-week, what do we do with Tuesday's?
Whereas, Thursday's feels completely different, it is after all ... almost the end of the working week!

... but anyway I woke up this morning feeling fine, I looked out of the window and saw the making of a glorious sunny day, so I'm wishing everyone a Happy Tuesday 😊

I hope you may be feeling 'sparkling' as the image shows but if not, I hope you feel better as the day goes on ... and perhaps you may wish to consider this tasty dish for dinner tonight!

Creamy Garlic Mushroom Chicken
a lovely dish and it's low in carbs too

Tuesdays are a happy day, when you look at it that way! Reminds me of a favorite song by 'The Moody Blues', "Tuesday Afternoon". The chicken dish sounds like a perfect way to end the day! Enjoy your day! x K

Here the sun is shining bright, but so cold, a chicken with mushrooms sounds just right!

We also have such beautiful sun...and that beautiful blue sky...joy.
Yesterday I baked a buckwheat cake with birch sugar... what do you think of birch sugar? I still had it in the closet... :-)))
Warm regards to you. Viola

That does sound delicious, but it will be cottage pie on the menu here this evening. Perhaps I will try it later in the week. X

A cold, rainy Tuesday after a warm, sunny week like springtime here. Really a lovely dish; chicken and mushroom is my favorite pair of ingredients.

That chicken looks like a perfect meal. As for Tuesday I feel no difference from one day of the week to the next (retirement does that).

That chicken dish looks really tasty. I like Tuesday. Less "catch up" from the weekend, but not all that end of week stuff, too!

Hello Viola, many thanks for your comment and your question about Birch Sugar ...

Birch sugar, is also known as xylitol, and in recent years has become one of the most widely used sugar substitutes. Its taste, is very similar to that of cane sugar but its natural origin and its low glycemic index have made it one of the more popular sweetener options for diabetics. However, it doesn't suit everyone ...
You can read more about Birch Sugar here
https://nutritionustad.com/birch-sugar/

Diet Doctor site also talks about xylitol here
https://www.dietdoctor.com/low-carb/sweeteners#xylitol

Keep enjoying your baking and the nice spring weather :)

All the best Jan
