May I interest you in a Dark Chocolate Chunk? These low carb sweets made with 85-90% chocolate do make a nice treat ...
Ingredients
2 tbsp Almond butter
4 squares Dark (85-90% cocoa)
¼ cup Coconut oil
1 tbsp Vanilla essence
Optional Ingredients
2 tbsp Rum
Blueberries
Nuts
Instructions
Put all ingredients in a bowl and microwave for around 1 minute or until mixture is melted and can be mixed together.
Add rum if this is your chosen option.
Pour mixture into ice-cube trays.
Place a blueberry on each, or some nuts (or just leave plain), and place in the fridge until the mixture has set and is solid.
Turn out of the ice-cube trays and store in the fridge.
Don't expect them to last long though ...

I made something similar but with cacao the hard stuff. But same idea. As this past weekend I got new chocolate molds. So FUN!
No rum thought and 100% cacao.

Hello Ivy, here in the UK it is harder to get the 100% cacao and is much more expensive. Most recipe ideas seem to follow the 85% - 90%.
But these chunks are good to make, with or without rum ...

Seeing this has given me a good idea for my Uncle's birthday present. He is diabetic and I feel sure he will like them. I can also get his nieces to help me make them. They can put some nuts on them.
