An Epic Summer Salad

We use so many different adjectives in our daily lives to describe many different things. Today I am going to use the word epic to describe a salad! However, it would be just as easy to use wonderful, delicious, awesome ... should you try this recipe I wonder how you would describe it?

Summer Salad … it's epic!
Perfect for BBQs and buffets, this is an assembly job of gorgeous ingredients – no cooking required.


Ingredients
Serves Six
400g black beans, drained
2 large handfuls baby spinach leaves, roughly chopped
500g heritage tomatoes, chopped into large chunks
½ cucumber, halved length-ways, seeds scooped out and sliced on an angle
1 mango, peeled and chopped into chunks
1 large red onion, halved and finely sliced
6-8 radishes, sliced
2 avocados, peeled and sliced
100g feta, crumbled
handful of herbs (reserved from the dressing)
For the dressing
large bunch mint
small bunch coriander
small bunch basil
1 fat green chilli, de-seeded and chopped
1 small garlic clove
100ml extra virgin olive oil
2 limes, zested and juiced
2 tbsp. white wine vinegar
2 tsp honey

Method
1. Make the dressing by blending all of the ingredients in a food processor (or very finely chop them), saving a few herb leaves for the salad. You can make the dressing up to 24 hrs before serving.
2. Scatter the beans and spinach over a large platter. Arrange the tomatoes, cucumber, mango, onion and radishes on top and gently toss together with your hands. Top the salad with the avocados, feta and herbs, and serve the dressing on the side.

Thanks for this suggestion for a summer salad. This sounds perfect! I may just leave the dressing as a choice for each person ( everyone is different in this house!) - Jenn

Wow! This does sound amazing! We recently combined mango and avocado in a salsa to have over chicken. I love the idea of this combo in a salad.

We saw some pretty big salads in Greece, mostly on other diners tables. But we never saw one as epic as your own. Jan and Eddie you need to trademark the name and that list of ingredients for posterity and big eaters alike.

I can't believe how much have missed. Sorry to be late again (story of my life, I fear), but I had another electrical outage last night. Made it four times in three days.

I want to try that salad. I was actually able to buy avocados at reasonable prices for the first time last week since they were banned here.
