Ten Minute Breakfast / Brunch Omelette : LCHF



Don't you think that weekends are made for a more leisurely breakfast or brunch! Time to sit and enjoy a plateful of healthy and so colourful great food.

Take this breakfast / brunch idea - a colourful plate of food to savour whilst you take time to think about the good things you may have planned for your weekend... and would you believe that this tasty omelette takes no longer than 10 minutes to create! 

Ingredients:
Serves Two
4 (free-range) eggs
sea salt and cracked pepper
2 tsp extra virgin olive oil
1 cup mixed greens (suggestion broccoli, beans & spinach)
1/2 cup cherry tomatoes
1 cup button mushrooms, halved
1/4 cup pumpkin seeds
1 avocado

Pumpkin seeds are greenish in colour, and can be eaten raw or cooked both in sweet and savoury dishes. Delicious roasted, or toasted and served on salads. They're rich in protein, iron, zinc and phosphorus. During the autumn, when pumpkins are in season, you can dry your own seeds for use in various dishes.

My grandfather always made his own pumpkin seeds...so much more healthy than when you buy them.

Breakfast is definitely a more leisurely affair here on a weekend. Sometimes, we have a late breakfast/early lunch and then that lasts us until tea time.

My hubby always laughs at me because I don't like mixing my eggs with anything else, I can have the same things on the side but I don't like mixing them, I know I have a problem :(

This omelette looks very good, Jan. I really enjoy omelettes that have lots of goodies in them. What a cute tea pot. I've always wanted a Pink kitchen.....maybe someday. :)
