Avocado Pie with a Taste of Chili : Vegetarian Low Carb Recipe

If you may be looking for something just a little bit different, then how about this idea from Anne Aobadia, it's an avocado pie with a taste of Chili. It is low in carbs and vegetarian too! Just have a look at the ingredients - avocado, cilantro and chili - lovely flavours that can make a fresh and delicious lunch, or perhaps you may prefer to eat it at a different time of day!

Serves Four
7g carb per serving

Pie crust
¾ cup almond flour
¼ cup sesame seeds
¼ cup coconut flour
1 tablespoon ground psyllium husk powder
1 teaspoon baking powder
1 pinch salt
3 tablespoons olive oil or coconut oil
1 egg
¼ cup water

2 ripe avocados
1 cup mayonnaise
3 eggs
2 tablespoons fresh cilantro, finely chopped
1 red chili pepper, finely chopped
½ teaspoon onion powder
¼ teaspoon salt
½ cup cream cheese
1¼ cups shredded (grated) cheese

Did you know ... Cilantro is a herb with wide delicate lacy green leaves and a pungent flavour. The seed of the cilantro plant is known as coriander. Although cilantro and coriander come from the same plant, their flavours are very different and cannot be substituted for each other. (Some countries refer to the cilantro as coriander, so any references to "fresh coriander" or "coriander leaves" refer to cilantro.) It can be easily confused with flat-leaf parsley in appearance, so be sure to sniff carefully. Look for a bunch with un-wilted leaves in medium green. Found fresh year round in most markets.

I'm not a fan of avocado, I wonder if it would be more palatable eaten this way, I may just give it a go. I'm always happy to try something made in a different way, it can taste so different.

This sounds delicious. I'm just wondering, once it's baked do you have to eat it right away so the avocado doesn't brown or does the baking stop it from browning so you can eat leftovers?

You don't have to eat this pie straight away, although it does taste lovely when served with a green salad. You could let it cool completely and use it later in the day ... perhaps enjoy a picnic. It also freezes well so why not double the batch!
