Ingredients
Serves Two
150g canned tuna (in oil), drained
75g butter (unsalted)
10ml white wine
squeeze of lemon
¼tsp ground nutmeg
¼tsp white pepper
¼tsp cayenne pepper
¼tsp sea salt
¼tsp ground mace
3 beef or salad tomatoes, sliced
½ red onion, finely sliced
Garnish
cut chives
ground pepper
olive oil
Method
Melt 50g of the butter with the wine and seasoning and pour over the tuna in a bowl. Mix well and then add the lemon juice. Place mixture into 2 individual ramekin dishes and pour over the rest of the butter. Place in the fridge until required.
Turn out onto plates, add a squeeze of lemon and a salad of sliced tomatoes, sliced red onions and garnish with the cut chives, course ground pepper and olive oil.

This looks delicious. I was looking at the picture thinking the white chunks in the tuna were probably diced egg whites? But it must be onions. Either one would be great in this as well.

We love tuna salad for lunch and I eat mine on a bed of lettuce with cherry tomatoes. I see that you've said tuna in oil. We noticed that the last can we opened was in water...not Spring water like it used to say. Interesting change. Enjoy your weekend!

We eat tuna salad all the time - I add celery, onion and mayo and love it with tomatoes. Those are so beautifully ripe!!
Yum! We do enjoy Tuna. I do miss my fresh garden tomatoes. Just not the same getting them at the market during the winter months.

That is an interesting combination of butter and wine. I must admit I struggle to eat large quantities of tinned tuna but this recipe looks to be up to your usual healthy level.
By the way and off topic, but poor Jamie is taking a beating from sections of the press for blaming Brexit when his restaurant reviews are actually vey poor. This may be the cause of people not going back to his eateries and lack of punters.
