Ingredients:
Serves 6
100g cubed pancetta
750g Brussels sprouts, trimmed
400ml chicken stock
25g butter
Method:
Fry the pancetta in a large non-stick frying pan for 4-5 mins until crispy and golden, then add the Brussels sprouts and cook for a further min. Pour in the chicken stock and simmer for 15-20 mins until the sprouts are tender and the stock has reduced. Melt in the butter, season well and serve.
Make ahead and reheat in the microwave in a covered dish for 3-4 mins on High.

brussels sprouts, cooked the right way, are delicious. and how can you lose adding pancetta!!!! the chicken looks good and healthy!!!!
I have gotten so many good ideas from reading your recipes. Never tried pancetta.
I've never tried buttered sprouts before, sounds delicious. And that chicken looks very good. You know, chicken is my favorite meat, and I'm always wanting to try new and different ways to make it. It sounds like you cook a lot, that's wonderful.
