Cider-braised cod with lentils


As this is Friday 16th October it is the last day of the 2015 UK's Seafood Week. You can read more here, but I thought why not share another fish recipe idea. 

Now, one of our sons loves cod and cider! So when I saw this recipe idea I thought it one to keep ... and surprise him with!

This beautiful cider-infused dish is full of flavour, with fresh white fish, hearty lentils, crème fraîche and refreshing lemon. Ready in just 30 minutes, it's the perfect easy recipe for a quick and tasty dinner.

One thing to note, per serving it is 29.5 g carbs so may not suit every readers LCHF menu plans. As always the choice is with you dear reader ...

Ingredients:

Serves Two
2 tbsp olive oil
2 leeks, finely sliced
2 garlic cloves, finely chopped
2 skinless boneless cod (or other white fish) fillets
500ml (17fl oz) dry sparkling cider
1 x 390g tin green lentils, drained and rinsed
small bunch parsley, finely chopped
1 lemon, zested, plus extra wedges to serve
100ml (3 1/2fl oz) crème fraîche

Method:
1. Heat 1 tbsp of the oil in a large, lidded pan set over a medium heat. Add the leeks and cook for 5-8 minutes, until softened. Add the garlic, cook for a minute, then sit the fish on top of the leeks. Pour over enough cider to cover the fish and bring to a simmer. Cover and cook for 8-10 minutes, until the fish is cooked through. Remove the fish to a plate and cover with foil.

2. Add any remaining cider to the pan, increase the heat and boil briskly, until reduced by just over half. Meanwhile, heat the lentils following the tin instructions. Tip into a serving dish and toss with most of the parsley, lemon zest, remaining olive oil and a little seasoning. Set aside.

3. Remove the cider from the heat, leave to cool for a minute, then stir in the crème fraîche. Season to taste, adding a squeeze of lemon, if needed. Arrange the leeks and fish over the lentils and spoon over the sauce. Scatter with the remaining parsley and serve with lemon wedges for squeezing over.

You're giving me lots of ideas with these fish recipes. As I've said before, my family aren't that keen on fish so we don't eat it very often but I might just be able to tempt them with some of these delicious recipes.

Yes, I have finished the lean to and in a whirl wind to label every box, container, drawer with the name of it contents...with my next project calling me.

I am most happy in nature. The trees are beautiful and great survivors. We got a small amount of rain and I am grateful but it will take more to get us back to par.

You know, Jan, I'm not much of a fish person, but this Fish Bake with Mediterranean Vegetables looks so delicious. I love foods from the Mediterranean - it must be my Greek heritage. You prepare such wonderful dishes always. Thanks for sharing, and have a nice weekend.

Great, healthy recipes, presented beautifully!! I don't think I have ever eaten lentils, but I love fish. I often eat it fried and I know that's just not healthy. Frying anything tastes so good, I think you could fry a finger and it would taste good ;)

Oh lentils....one of my FAVOURITE foods!!! I don't eat fish but could easily substitute that...thanks for the ideas you have generated...cider is always a favourite too, especially as autumn kicks in.xxx

You could reduce the carbs by reducing the quantity of lentils.

I celebrated seafood week with a herring containing a large hard roe, and a big hunk of grilled salmon, both with toasted almonds and a buttered oatcake. Sadly the frozen spinach never returned to the Co-Op freezer cabinets or I'd have had that with the salmon. I'll have to go to one of the farm shops and buy some but theirs is inferior in quality.

Oh and I heard cod is now off the endangered species list so I also fried (in olive oil) a can of unsmoked cod's roe, another delicacy harking back to childhood.

Jo - if you like fish then you can't beat a nice piece in with your menu plans. But if you're not too keen then perhaps just introduce it every now and again, give it a try ... blame it on me if the family complain LOL!

Debbie - many thanks for both your comments here. I do a lot of my cooking using butter and olive oil ... just love the taste of it... and it fits in so well with our LCHF recipe plans.

Snowbird - many do enjoy cider in the Fall / Autumn. Recipes are just made for sharing, and of course amending to suit our own tastes. It is good that so many recipes are so versatile.
