A Simple Green Salad With Avocado

Green salad with avocado

Sometimes, do you just want a a simple green salad? I know I do, and this easy recipe idea may be just what you are looking for. Great to eat at home with family and friends, or if you've been invited to a get-together and you've offered to take a salad bowl you may wish to consider this! It's a simple, fresh-tasting salad to serve as part of a summery buffet ... just perfect!

Ingredients:

Serves up to 10
1 tbsp lemon juice
pinch of salt
4 tbsp olive oil
small bunch finely chopped chives
200g bag mixed salad leaves
2 sliced, ripe avocados

Method:
Squeeze 1 tbsp lemon juice into a jam jar with a pinch of salt. Pour in 4 tbsp olive oil, add a small bunch finely chopped chives, put on the lid, then shake well. To serve, toss with 200g bag mixed salad leaves and 2 sliced ripe avocados.

Tip:
Getting to the party.
Prepare the dressing up to four hours ahead, but don’t add the avocado or leaves until you’re ready to eat. Transport the dressing in the jam jar, and keep the avocados whole, and leaves in the bag. When ready to eat, finish the salad.

Extra Tip:

'Simple & yummy'. You could also add a teaspoon of wholegrain Dijon mustard to the dressing.

Of course what other delicious tastes you, or your host, may wish to serve is up to you. Some may like a few new potatoes, others may prefer a crustless quiche, or how about some lovely meat slices - so much else to choose from too, have you any suggestions? The choice is always yours, and it goes without saying, (but I will) if you are a diabetic or have food allergies, do carefully consider your choices.

Summer is such a lovely time of year for a get-together.

No avocado for me but a few slices of cucumber are always nice to add.
