Libby at Ditch The Carbs blog is my sort of 'gal', and there are many out there! She is a LCHF super person and chef ! She's just come up with the ultimate coconut fat bomb ... read on and see what she says ... it's surely another winner!

"Fat bombs are a fabulous way to curb your appetite. You may never have heard of fat bombs, and the idea of adding more fat into our diet is the exact opposite of what we have been told for years – to cut back on fat. But by eating more healthy fats will keep us sustained for hours and coconut oil especially, has an amazing array of health benefits such as anti fungal, antiviral and contains lauric acid and medium chain triglycerides which are metabolised uniquely to have beneficial effects in the brain.

But remember, before you can increase your fat intake, it is imperative you must cut back on your carbs otherwise you are eating a SAD diet (standard American diet) high fat and high carbs which is an absolute health disaster.

These fat bombs use coconut butter which has some carbs compared to coconut oil, but many people just do not like the texture of plain coconut oil."

I've never heard of fat bombs before and only recently heard about the health benefits of coconut oil. So is it just a case of eating these fat bombs once they're ready?

they actually sound disgusting - why would you want to eat them?

A Dietitian once tried to test me, I ate her liver with some Fava beans and a nice Chianti.

Hello Jo ... and many thanks for your comment. Keep the 'Fat Bombs' in the fridge until you want to eat them, otherwise the coconut oil will melt or soften. You can make them as a dessert or just to keep when hunger strikes. Many I know do eat them as a sweet type snack ... they are quite filling. Do have a go at making some and see what you think.
