Avocado, Bacon and Goat-Cheese Salad


This is a lovely and most delicious, low-carb salad, for those who love avocados, goat cheese and nuts. It is great for lunch, and can also be served as a light dinner ... the choice is yours.

Ingredients:
4 servings
8 oz. (225 g) goat cheese
8 oz. (225 g) bacon
2 avocados
4 oz. (110 g) walnuts
4 oz. (110 g) arugula/ rocket lettuce


Dressing
½ lemon, the juice
4 oz. (110 ml) homemade mayonnaise
4 oz. (110 ml) olive oil
2 tablespoons heavy whipping cream

I had to stay away from them because of the mold factor but now I'm back to eating avocados and ever so happy about it.

So many people are afraid to eat them because of the fat. Yet, they will eat ding ding meals so go figure.

Hi!!! I adore avocados-sooo creamy!!!! When I lived in Bali, I loved buying an avocado juice at the juice stall-it had condensed milk and chocolate sauce in it as well as crushed ice!!!
