Ingredients (make 25 cookies):
1.6g carb per cookie
120g ground almond
60g soya flour
100g xylitol (powdered)
1 egg
40g coconut oil (melted but not hot)
½ tsp. bicarbonate soda
Zest of 1 lemon
Juice of ½ lemon

Soya flour is pale yellow in colour, with a nutty flavour and aroma, it is made by grinding roasted yellow soya beans. It is available from health food shops. However, if you want to avoid GM foods, check the label carefully, and buy organic soya flour which is GM-free.
Store soya flour an airtight container and keep it refrigerated.

Yum, they look delicious, I'm a big fan of anything lemony and I like soft biscuits. I bet they're very moreish.
I have been cooking with almond and coconut flours but haven't tried the soya yet. I will have to check if the store we buy our other flours in have that one, I haven't come across a recipe before now calling for it.

It was lovely to hear from yoU! I apologise for not visiting- I've been away on a cruise for 2 weeks and prior to thaat was in France and had no computer for either. This sounds a nice recipe. I do like Soya so I would be most intrigued to try these!
