Oopsies (low carb bread)


Never heard of Oopsies? No, neither had I until we went LCHF, low carb and wheat free. Oopsies are a great bread substitute which is low carb, wheat free, sugar free, grain free. Use oopsies in school lunchboxes with your favourite fillings, or add some stevia (or sweetener of choice), and use cream cheese and berries as a filling for a sweet treat.

Ingredients serves eight 

3 eggs
100g of cream cheese
½ tsp baking powder
½ tsp psyllium husk
pinch salt

Instructions 


Separate the egg whites into one bowl and the egg yolks into another.
Whisk the egg whites until very firm and peaks will form. In the other bowl add the cream cheese to the yolks and whisk until there are no lumps of cream cheese left.

Add the psyllium husk and baking powder and whisk again. By adding the psyllium and baking powder, it makes these ooopsies more bread like. Gently fold the egg white mixture and egg yolk mixture together. Line a baking tray with baking paper or silicon sheet to stop them from sticking and actually coming off the sheet in one piece!

Place a large spoon of mixture at 180C for 5-10 minute

Oopsies are not bread, they are cold omelettes. Double yuck and bleurgh.

no, sweetie-lamb, oopsie-rolls are NOT bread -- that's their virtue.

I just love it when people who have never tried a thing can decide that it's yucky....

I could live the rest of my life without sandwich rolls, but their convenience when away-from-home cannot be underestimated. I bought a baking plaque (labeled for "moon pies") and spray them generously with nonstick liquid, and using two-thirds of the basic recipe make three pairs of perfectly-sized, uniform, easy-to-clean-up-after buns! One of the best LC hacks out there....

Libby is a long time diabetic friend, I taught her most of what she knows re low carb, but you know, no disrespect, Women can get a bit uppity at times.

Hi Tess.

I'm a little surprised at your assumption I've never tried them, could you tell me where you got that info from?

Eddie and I are almost eight years down the line with this and I can tell you in the early days I tried all that substituting lark (I don't do it anymore) and oopsie 'rolls' are one of the most disgusting things I ever tasted. Admittedly, I don't eat many eggs and I prefer them hot so I may be biased.
