Crab and Chia In Cucumber Cups (with chervil sprigs)

Crab and chia cucumber cups

Paleo, Low Carb, Tasty ... These little bites of crab and cucumber are a great light snack for summer, adding chia seeds makes them more sustaining. A little grated ginger is a good addition if you like Asian flavours.


250g white crab meat
about 2tbsp Paleo-friendly mayonnaise
Grated zest and juice of a lime
1 large cucumber
2tbsp chia seeds
1tsp chopped red chilli
chervil sprigs (optional)

Mix the crab with the mayo, chia and a good pinch of lime zest plus a squeeze of juice. Taste and adjust the seasoning.

Cut the cucumber into 5cm slices and use a melon baller or a teaspoon to scoop out some of the seeds and make a cup.

Fill the cups with crab and chia. Top with a little lime zest and chopped chilli, plus chervil sprigs if you have them.

Chervil (pronounced "SHER-vil") is a delicate culinary herb used frequently in French cuisine. A member of the parsley family, chervil has a mild flavor with hints of liquorice or anise.

Chervil leaves are delicate and curly, somewhat resembling carrot greens. Because of its delicate flavor, chervil is usually included in recipes, such as salads and soups, where it will not be overpowered by the other flavors.

Chervil substitute: If you don't have chervil and a recipe calls for it, you could substitute fresh parsley or tarragon or a combination of the two.

Those cucumber cups are brilliant. I love crab but I suppose there's lots of other things you could use the little cups for too. It's another great idea for finger food.
