Courgette / Zucchini Mint and Feta Fritters

Take four ingredients (as pictured here) courgettes, mint, feta cheese and eggs ... then make some lovely low carb fritters. So easy you'll see just read on ...

Courgette, mint, feta fritters

When courgettes (zucchini) are in season, why not buy up large and make huge batches of these courgette mint and feta fritters. They are so delicious, colourful and nutritious. Keep the extra for lunch the next day at work or school. Many fritters have wheat, flour or other agents to bind them together. You don’t need any of those, just 4 ingredients go into these low carb fritters.
Serve with a salad and drizzle with oil, or use as a side dish, for lunch or dinner. Courgette Mint and Feta Fritters also make an excellent after school snack.

INGREDIENTS

Serves 4/5
4 or 5 courgettes grated
50g feta cut into cubes
handful of fresh mint roughly chopped
2 eggs
coconut oil

INSTRUCTIONS
Grate the courgette and squeeze out excess water.
Add the mint, feta and eggs and stir through.
Heat a frying pan and add fry small batches in coconut oil until golden.

Hi Martha - thanks for your comment. I love 'hand-me-down' family recipes you can't beat them, and I think it is so good to be able to do this.

That sitting area does look inviting, but not ours, it is courtesy of 'Mr Google' ...
