Iced Green Tea Mojito


Well I like tea and I like white rum. I do drink tea every day (not necessarily green tea) but rum is a once in a while treat! Seeing this drink idea, I thought this could be the perfect summer cocktail, a cross between a tall glass of fresh brewed iced green tea and a mojito! Some may want to make it their 'signature drink' for the summer. It is icy cool, and has the added bonus of antioxidant rich green tea. It's so simple ... using ingredients you probably have on hand such as green tea, fresh limes, fresh mint leaves (growing in your garden at the moment), baby arugula/rocket, and some of your favourite sweetener e.g. stevia to keep it sugar-free.

Multiply the recipe and make a pitcher / jug for a party, or make them by the glass for a more intimate gathering. Now, for those of you who don't drink alcohol, leave out the rum for a refreshing mock-tail.

This is a classic drink which is seriously refreshing - just right for a hot summer day.

Ingredients:
1 tbsp fresh lime juice
4 large spearmint leaves, plus more for garnish
4 baby arugula / rocket leaves
2 tsp (sugar) ... use your favorite sweetener
1/2 cup brewed green tea, chilled
1 oz white rum

Directions:
Muddle the lime juice, mint, arugula, and (sugar) sweetener together in a tall Collins glass until the leaves bruise lightly and the flavours release. Add ice until glass is about 3/4 full and then pour in rum and green tea. Stir well and garnish with mint and lime.

Now if you really do not fancy an alcoholic cocktail, and many readers may not, how about a nice glass of water ... it is a great way to stay hydrated and by drinking it in its purest form it can do wonders for every part of the body. You may wish to consider sprucing it up with herbs like rosemary, basil, mint. Or how about adding some healthy squeezes of lime or lemon juice, or perhaps some slices of cool refreshing cucumber. The choices are endless. I wonder what you will decide?

I don't drink alcohol but I do enjoy flavored water...I like the one with cucumber and mint... it's a refreshing change ♡

Hi Jan, that looks so pretty. I've never been a fan of green tea but I may try the recipe without the rum. The other ingredients should punch up the green tea flavor. I know the tea is a good antioxidant.
