Ingredients:
Serves Four
1 cup fresh blueberries
3 to 4 tbsp powdered Swerve Sweetener* (depending on how sweet you like it)
1/4 cup packed mint leaves
1 cup white rum
1/2 cup fresh lime juice
1/2 liter club soda
Blueberries and mint leaves for garnish
Instructions:
In a blender, combine blueberries and powdered sweetener. Blend to a thick puree. Transfer to a pitcher / jug.
Tear mint leaves by hand and add to a pitcher / jug that holds at least one litre. Crush with a muddler or the end of a wooden spoon to release the oils. Add blueberry puree, white rum, lime juice and soda and stir to combine.
Fill 4 highball or bucket glasses with crushed ice. Pour mojitos into glasses, garnish with blueberries and mint leaves and serve.

A muddler - is a bartender's tool.
Used like a pestle to mash, or muddle, fruits, herbs, and/or spices in the bottom of a glass to release their flavour.

Hi Jan, what a beautiful looking beverage. Any kind of cold drink is what I miss most on this no carb, no sugar diet. I gave up diet soft drinks because I'm afraid of the sweeteners and caramel coloring the beverage companies use. This might be a good drink even without the alcohol. I use stevia to sweeten and am not as afraid of that. I've been offline for a while so hope everything is good with you and you are enjoying your summer.
