Slow Cooked Chicken with Red Wine and Asian Greens : Low In Carbs

This lovely Slow Cooked Chicken with Red Wine and Asian Greens recipe is by Julia McPhee, a fellow low carber who lives in New Zealand. Julia has a passion for creating low carbohydrate recipes and adapting traditional recipes to fit the low carb agenda. Her aim is to make the low carb lifestyle an achievable option for everyone, and to help people to understand that there is life after carbs! She has been living and promoting the low carbohydrate lifestyle for over three years and while weight loss was her primary motive, she continues to notice positive changes in herself, including increased and consistent energy levels, less of those age related aches and pains and naturally improved food choices.

Here is what you need and how you cook this great tasting meal ...


Ingredients:

Serves 4
2 tbsp Coconut oil
500 gm or 4 whole Chicken thighs on the bone
1 onion quartered
4 whole Garlic cloves
1 knob Ginger
2 Chili's sliced
¾ cup Red wine
¾ cup Chicken stock
2 cups Asian greens (bok choy etc) or spinach and kale
1 Carrot sliced
Fresh herbs (coriander, parsley, thyme etc)
Salt and Pepper to taste
½ cup Cream


Instructions:
Heat coconut oil in pan and add chicken legs, Cook until browned on both sides (skin side in particular). Place chicken in a slow cooker. Add onion, garlic cloves, ginger, wine and stock. Cook on high for 4 hours or on low for 6-7. Before serving, add sliced greens, carrot, cream and cook until vegetables are heated through. Taste before serving and add extra flavouring (chili, garlic etc) if needed.

It is most interesting to read that this lady has improved health since eating a lower carb template. This has been the experience of so many.
Although this does look a very nice recipe it may not be my first choice. Preference would be to your pork casserole recipe. Husband and I do like that one.

Dearest Jan, thank you for coming by again to view the blue delphiniums! YES! Aren't they the most striking blue? And that photo is not enhanced in any way. That is their pure color!

AND this recipe! I think I mentioned before, that though I am not diabetic, I do prefer and greatly enjoy a diet low in starches. That's not to say I don't LOVE them, but I felt I had to curb my craving to gorge myself in them! This recipe is wonderful because I've made something similar. You may also enjoy what I do: I bake a chicken breast then top it with marinara sauce (with basil, garlic of course, any Italian herbs you wish) then bake a little longer to allow the sauce to meld into the breast. I then sautée onions and broccoli (or any green of your choice) and pile it onto the chicken breast. It tastes exactly like pizza without the carbs.

Anita - many thanks for your comments, I love the blue colour of the delphiniums that feature on your blog. Thank you too for sharing your chicken recipe idea. It sounds a lovely one ... for those of you who may not be aware a marinara sauce features tomatoes and a mix of herbs (delicious).
