Ingredients:
Serves Four
2 tsp groundnut oil
100g frozen chopped onions
1 tbsp frozen chopped ginger
200g tenderstem broccoli, stems halved
2 red peppers and 2 yellow peppers, de-seeded and cut into thin wedges
1 tbsp light soy sauce
25g toasted flaked almonds
Method:
1. Heat a large wok or non-stick frying pan over a medium heat, then add the oil and swirl around the pan. Add the onions and ginger and cook for 2 minutes. Turn the heat up to high, add the broccoli and stir-fry for 2 minutes.
2. Add the peppers and cook for 6 minutes, stirring as you go. Add the soy sauce and scatter over the flaked almonds. Spoon into a warmed serving bowl and serve straight away.

I'm not much of a pepper person
What a wonderfully colourful plate of food. I've only recently taken to peppers and much prefer mine raw in a salad or with some hummus.

Peppers are great aren't they and so colourful. I do try and buy the red, green, yellow and orange ones most weeks, and then ring the changes with my menu plans.
