Carrot, orange & avocado salad : A taste of Summer

Carrot, orange & avocado salad

This zingy side salad is packed full of goodness and it adds a touch of colour to any dish.

Ingredients:
Serves Four (10g carbs per serving)
2 oranges, plus zest and juice of 1
3 carrots, halved lengthways and sliced with a peeler
70g bag rocket
2 avocados, stoned, peeled and sliced
1 tbsp olive oil


Method:
Cut the segments from 2 of the oranges and put in a bowl with the carrots, rocket and avocados. Whisk together the orange juice, zest and oil. Toss through the salad, and season.

This dish will certainly add a splash of colour to any dining table .. just right for the summer season!

Hello Eileen and many thanks for your comment. This is a lovely salad and Rocket is a very 'English' leaf, and has been used in salads since Elizabethan times. It has a strong, peppery flavour, and the leaves have a slight 'bite' to them. If you see 'rucola' or 'arugula' for sale or on a restaurant menu - it's the same thing. Hope this information helps.
