Now you don't have to be a master-chef to make this delicious chicken curry. It is very easy to make, tastes great and is just a super low carb dish.
Ingredients:
Serves Two
Two chicken breasts cut into pieces
Two tablespoons of chopped green Jalapeno peppers seeds removed
Three teaspoons of Pataks madras paste (hot)
A cup of chopped mushrooms
Half a chopped red bell pepper
Half a cauliflower grated
Half a cup of double cream
Two large knobs of butter
Salt and pepper to taste
Method:
Place chopped chicken in a frying pan with a knob of butter, cook at a medium heat turning to lightly brown all over.
Add the cream, peppers, mushrooms and curry paste. Allow to simmer for around 15 minutes, keeping well stirred.
Grate half a cauliflower and place in a frying pan with a knob of butter. Stirring well, heat until steam is rising.
Serve on a warmed plate and enjoy. Very easy to make. No cookery skills required and tastes great. Low carb, fresh whole foods.

It looks delicious. I rarely make curry as the rest of the family won't eat it, or should I say they wouldn't at one time, Eleanor's coming round to it so I sometimes make it when there's just the two of us at home. It's a shame really as curry is one of my favourite dishes.

This is a lovely recipe and so easy to do ... although we make it with a 'hot paste' it can be made with one slightly milder, just wondered if the family may prefer this?
If not then why not enjoy a mother and daughter evening one night!!!

I might give this a try.
My standard chicken curry includes cashew nuts, multicoloured peppers and garlic. I mix and match turmeric, cayenne, cardamom, coriander and cumin, and sometimes ginger, with tomato puree for the sauce. Sometimes I add other stuff like bamboo shoots and water chestnuts, or broccoli florets.
By evening I can eat an anatomically correct (ie. small) portion of rice.
For this I'd probably delete the cardamom and ginger and add garam marsala. No, I don't still have a spice rack, I keep them in the front of an overhead cupboard.
Hi Chris ... I don't have a spice rack either! Either use fresh or keep a variety of spices / herbs in the cupboard!
Curries are so versatile from the milder variety to a slightly stronger one, just make them according to taste. I do like bamboo shoots too - although not so keen on water chestnuts ... however, with so much LCHF foods to choose from it can be so easy to ring the changes.

Well I had a version of this today but because I'd been on a long walk AND mowed the lawn I treated myself to an anatomically correct (ie small) quantity of real rice. Delicious!

Now whether cauliflower rice accompany's it or rice - the choice is always up to the individual! But of course many diabetics, and non diabetics prefer to choose the cauliflower variety.
